Meet the Bakers

Jenn, Baker/Executive Pastry Chef Hi Everyone! My name is Jenn, and I am proud to a part of the team at Amy's Cupcake Shoppe. I am just a girl that has a passion for cakes, baking, decorating, cooking, and eating! The thing that relaxes me the most is being in the kitchen and cooking up some tasty creations. I love fondant and making gorgeous cakes for every occasion. Somewhere along the way I got the courage to go to culinary school. I attended and graduated the California School of Culinary Arts, Le Cordon Bleu in Pasadena, CA in 2007. From the first day of school I knew this was right. I started my little business Fig + Moon Patisserie out of my house and have been making cakes ever since. I have such fond memories of watching my Grammys cook, and it was always so good. She was, and still continues to be my inspiration. I was born and raised in Southern California, where it's always sunny and the waves are just right. I met Amy through Instagram, and instantly hit it off. We would like each others' photos and created a support system through our love of sweets. So, when she offered me a job I felt like I couldn't pass it up. Although, it did take the hubby a little more convincing to move to Minnesota. To me, it was fate, and I couldn't see myself anywhere else. So me, the hubby and our cat Mags took a leap of faith and moved. We are absolutely head over heels in love with Minnesota, and are so glad we are here! Our families were so supportive of us going out there after our dreams! I'm also a movie loving, animal loving, hugger, and laugh-out-loud till you cry girl. I am not afraid of a little car-oake and board games. When I'm not at the shoppe I love spending time with my husband and cat Mags. We have been married 5 years, and I couldn't imagine my life without him and his support. We are inseparable and have nick named each other, the Snoopys. I am so grateful for the opportunities I have been given, and I can say I love coming to work every day. I am so blessed to not only call Amy my boss, but my friend. We have such an awesome time in the shoppe working, learning, teaching and laughing. Thanks to my loving husband, and all our family and friends who have come along with us on this journey.

Katie, Baker/Pastry Chef Hello! My name is Katie and I am one of the pastry chefs here at Amy's Cupcake Shoppe! I am a recent graduate of Le Cordon Bleu in the Baking and Patisserie program, here in Minnesota. Before I decided to enter the crazy world of baking, I was studying zoology at Mankato State University. Anything that has to do with animals is another passion of mine, but I am extremely grateful for the big change I decided to make! I've been baking my whole life, and it was always a side passion before I decided to make it my career. Growing up, I always remember making Christmas cookies with my grandma and cousins, and now I spend the holidays making them with my mom. When I was a little girl, I would go to Byerly's with my dad and be mesmerized by all the amazing treats, telling myself I would do that some day. In 2012, I took a trip out to Hoboken, New Jersey, and I knew right then and there I wanted to do this for the rest of my life (even though it took me 4 years to get there)! There are so many things I love making at the shoppe on a daily basis. Before starting at Amy's I loved making cupcakes. I enjoyed decorating them in so many different way and making delicious flavors come together. However, recently I have been learning how to make fancy sugar cookies, and I have to say it's my new favorite! It's amazing how many things I have learned in the past few months from Amy and Jenn. Between the two of them, they have so many amazing skills and I cannot wait to keep learning all the things they have to offer. I have never been able to say I absolutely love going into work every day, until I started here at the shoppe. I remember being at school one day and Amy telling me when she opens her storefront, there would be a job with my name on it. Little did we know a year later, it would be a reality. I am so honored Amy asked me to go along on this incredible journey with her, and I'm excited to see what the future hold for us all!

Lizzy, Baker/Pastry Chef Hi! I’m Lizzy! I joined the team in June 2018 and have bonded with the girls ever since- it’s such a fun, loving, delicious work environment! I grew up in Kenosha, WI and graduated from the French Pastry School in Chicago. Being new to Minnesota, they’ve welcomed me at the shoppe and made me feel right at home. My husband, Raymond, and I moved here in September 2016 from Colorado Springs, CO where we worked and met at the Broadmoor resort. We met in one of their restaurant kitchens working as a pastry cook (yours truly) and a line cook. To this day we love to spend time in the kitchen together, cooking anything and everything our hearts (let’s be real, our stomachs) desire. Both originally being from the Midwest, we decided to move to the Twin Cities to be closer to our families. We also chose to say goodbye to the late nights of restaurant labor, and find new culinary positions. He’s found a love for cutting meat at the Whole Foods butcher shop in Edina, and I found Amy’s amazing Cupcake Shoppe! Baking cupcakes, cookies, scones, and cakes has brought me back to the roots of my love for sweet treats. It all began with my Mom, an amazing baker who taught my siblings and I what the best banana bread, coffee cake, Christmas cookies and Birthday cakes should taste like! I was hooked, my Mom and I baked all sorts of tasty treats and brought them around to friends, family, co-workers and more. She showed me a way to bring joy and cheer, and simply brighten people’s day with these yummy gifts. Food is such an important element in all our lives, and the impact of handmade treats can be incredible. The love for food also stemmed from both of my adored Grandmothers; one taught me how to work an apple pie crust to perfection, the other passed down her Italian touch on sublime homemade pasta. As an ode to them it’s a goal for me each day to make or do something exceptional for someone else. Mostly this is food related, but it also translates to everything in life. Small acts of kindness are what makes each day wonderful! At the Shoppe I feel this goal is absolutely reached, as we all do our best to satisfy and delight!

Baking is my passion! I have been baking my whole life and I just love it. Decorating and making beautiful treats is so rewarding, and seeing the look on people's faces when they taste their treats is the best. Baking, to me, always feels like home. Being in the kitchen making delicious treats for the ones you love and the moments and memories made are for a lifetime.

I have also played and competed in sports all my life: gymnastics for 16 years, diving for five, and dabbled in softball and track and field. Being in sports has honed my ability to multi-task and keeps my perfectionist ways in check, although being a perfectionist is a very good trait to have in the baking industry! I also worked in the medical field doing CT scans for the last 10 years. Being with patients, and making their day better in any way was always my goal. Getting to know the patients on a personal level was so important, and I love being able to have that at the shoppe with our amazing customers too.

Another lifelong passion is our cabin, and we've been going up north for over 30 years. Spending time with friends and family, relaxing on the water or telling stories by the bonfire, surrounded by the gorgeous nature of northern Minnesota is heaven to me.

Since I was a little girl, my mom and I have had a tradition of baking Christmas cookies, and now I am a mother of a beautiful daughter named Caleigh. I keep the tradition going with my daughter and my amazing husband, too.

Having my own bakery storefront has been an aspiration of mine, and I am so excited for all the opportunities coming my way. We now have our beautiful shoppe up and running on Mainstreet in Hopkins, and second location in Southdale Mall in Edina. Come see us for one or a few dozen treats. We'd love to meet you! Thank you for your continued support, and I hope to hear from you soon!
